Beef and Ham Roll
1lb Beef, 1/2lb Ham, 1 Egg. Pass the raw Beef & Ham through a mincer twice and bind together with the egg, well beaten. Form into a roll, tie in a cloth and boil 3 hours. When the roll is nearly cold, cover with bread crumbs.
1 pt Stock, 1 qt Milk, 1oz Flour, 2 oz Butter, 1 Carrot, 1 Onion, 1 Leek, 1 Small Cabbage, Pepper and Salt. Put Butter in a stewpan. When it boils put in veg having cut all up very finely. Let them cook but do not brown, add the stock & milk leaving a small quantity to mix with flour. Add pepper & salt and simmer very gently for half an hour then serve.
1lb Lean Beef, 1lbFresh Pork. Chop very fine, add 1 onion, a little chopped parsley, Salt & Pepper & 1/2pt fine bread crumbs. Bind together with 3 eggs. Make into a loaf and place in a buttered baking tin. Dust thickly with flour, put little pieces of butter on top. Bake in a good oven, basting with melted butter. Serve hot or cold.
